Here’s a link to a Sun article titled Hands-On Java EE 5. The article is focused on AJAX enabling a legacy application, however, there’s a link to the Java EE 5 Tutorial which contains an introduction to the core technologies including some sample code.

Netbeans.org has published a “Getting started” EJB 3.0 tutorial using Netbeans 5.5b2 and Jboss 4.0.4. Though it’s NetBeans centric, it’s worth a look.
